SPAM Cakes

Ingredients

  • 2 cups pancake mix
  • 1 (12 ounce) can SPAM® Classic, cut into small cubes
  • cooking spray
  • 1/2 cup pancake syrup, or as needed

Directions:

  • Prepare pancake mix according to package directions.
  • Fry SPAM(R) Classic in skillet over medium heat until lightly browned, about 5 minutes.
  • Pre-heat griddle or large skillet to medium and spray lightly with non-stick cooking spray.
  • Pour pancake batter onto griddle, using about 1/3 cup batter per pancake.
  • As the first side is cooking, top each pancake with some cubes of SPAM(R) Classic; cook pancakes until bubbles form and the edges are dry, about 3 minutes. Flip pancakes over; cook on the other side until golden, about 2 minutes.
  • Repeat with remaining batter and SPAM(R) Classic. Serve topped with pancake syrup.

Deviled Spam Sandwiches

Deviled spam spread perfect for sandwiches or with crackers!

Deviled Spam Sandwiches
Ingredients:

  • 1 can spam, finely grated
  • 1 tablespoon sweet maui onion, finely minced
  • 1 boiled egg, finely grated
  • 1/2 – 3/4 cup mayonnaise (according to preference)
  • 1 teaspoon Aloha shoyu
  • pepper

Cooking Process:

Grate the spam. Combine all ingredients adding just enough mayonnaise to hold ingredients together.
Great for sandwiches or as an appetizer on bread or crackers.

Lazy Spam Donburi Recipes

This donburi is kind of a deconstructed spam musubi in a bowl. I have shared my unending donburi love in previous posts, but really, there is nothing easier than a one skillet meal on top of fresh rice. Recipe courtesy of Devany of Miss Mochi’s Adventures

Lazy Spam Donburi

Prep Time: 10 | Cook Time: 10 | Ready In: 20

Ingredients:

  • 1/2 can SPAM
  • 6 tbs Aloha shoyu soy sauce
  • 3 tbs mirin
  • 2 tbs sugar
  • 2 tbs sake
  • 2-3 cups hot rice
  • 2 sheets of nori
  • furikake

Cooking Process:

Slice the Spam into 1/4″ slices, and in turn chop the slices into 1/2″ squares. Fry the Spam over medium heat until crispy in a large frying pan. Mix the shoyu (soy sauce), mirin, sake, and sugar together and pour over the spam. Stir until reduced by half. Place the rice into two bowl and roughly tear the nori into chunks to place over the rice. Spoon the spam over the nori and divide the sauce between the two bowls. Sprinkle with furikake and serve. Serves two

Easy-Kine Char Siu Spam Recipes

Easy char siu spam, for those times when you want the taste of char siu pork but too lazy or can’t find any.  I love to serve this with rice, fried noodles or saimin.  The Noh seasoning packets are the perfect solution!

Easy-Kine Char Siu Spam

Prep Time: 10 | Cook Time: 30 | Ready In: 40

Ingredients:

  • 2 cans spam
  • 1 packet NOH char siu seasoning
  • 1 tablespoon Aloha shoyu
  • 1 tablespoon sesame oil
  • 1/4 cup honey

Cooking Process:

Cut spam pieces into 1″ cubes and place in bowl with shoyu and sesame oil and mix to evenly coat. Add char siu seasoning packet to bowl and mix well, ensuring that all pieces get covered with seasoning.  Place seasoned spam onto a coated grill top or I like to use a shallow (1/2″) foil pan with holes poked on the bottom.  I also like to use keawe wood chips to slightly smoke the spam while cooking (optional).  Cook the spam in indirect heat allowing the char siu to slowly carmelize without burning.  You might want to move pieces of spam around to get a nice char on all sides.  Just before serving, lightly brush honey on spam and cook until golden and carmelized.

Teriyaki Spam Katsu Musubi

Teriyaki spam katsu musubi, another one of Chef Adam Tabura’s creations made especially for Hormel. This spam musubi creation is like two dishes in one: spam musubi and katsu!

Teriyaki Spam Katsu Musubi

Prep Time: 10 | Cook Time: 10 | Ready In: 20

Ingredients:

Teriyaki Spam Katsu Musubi

  • 1 12-ounce can SPAM® Teriyaki, cut lengthwise into 8-10 slices
  • 4.5 oz White steamed rice, cooked ahead of time
  • 5 sheets Japanese Nori, cut in half
  • 1 oz Olive oil
  • 6 cups Japanese Panko, bread crumbs
  • 4 Eggs
  • 1 cup Japanese Mochiko flour

Cooking Process:

  • To make this spam musubi creation, heat oil in a medium size sauté pan, then sear SPAM® Teriyaki on both sides for 2-3 minutes. Place on rice and wrap with nori.
  • Then go through basic breading procedure: flour, egg, then Panko to finish. Deep fry at 350 degrees for 2-3 minutes or until golden brown.
  • Serve this teriyaki spam katsu musubi right away to retain crispness.

Chef Chris Manabe’s Ahi Spam Dip With Crackers Recipe

Chef Chris Manabe from Side Street Inn and grandson of the founder of Diamond Bakery makes his spam ahi dip with Diamond Bakery crackers.

Ingredients:

  • 1 can Spam Lite, cubed
  • 1 lb fresh poke grade ahi, cubed
  • 1 Cup Green Onions, Finely Chopped
  • 1 cup Ewa sweet onions, julienne
  • 1 cup low sodium Aloha Shoyu
  • 1 lemon, squeezed
  • 2 teaspoon garlic, grated
  • ½ teaspoon ginger, grated
  • 2 cups mayonnaise
  • ½ cup cracker meal

Cooking Process:

Combine all ingredients in a mixing bowl and mix well. Put mixture in small casserole dishes and add more cracker meal on top. Drizzle with butter (optional). Place in 350 degree oven and bake for 15 min. Serve with your favorite variety of Diamond Bakery crackers.

Mini Korean-Style Food Kimbap Spam Musubi

I thought I would share one of the recipes in our newest cookbook: “Cooking Hawaiian Style Volume 2” These are mini Korean-inspired musubi made with diced carrots, spam, korean nori, daikon and a touch of roasted sea salt. They make the perfect pupu-sized bite for any party. Kimbap Spam Musubi Korean Recipes

Ingredients:

  • 4 cups cooked rice
  • 1/2 carrot, finely diced
  • 5 slices spam, finely diced
  • 1/2 cup daikon, diced (pat dry)
  • 3-4 tablespoons sesame oi
  • Salt to taste
  • 3 packages Korean seasoned seaweed, crumbled
  • 2 tablespoons toasted sesame seeds

Cooking Process:

Cooke rice and allow to cool for 10 minutes. Finely dice carrots, spam and daikon into little cubes. Fry Spam in 1 tablespoon sesame oil until golden brown, remove from pan and set aside. Using the same pan, add carrots and cook over medium heat for 2-3 minutes to bring out the color and reduce the liquid. Pat daikon down with paper towels and add to pan with carrots and cook for an additional minute. In a bowl, combine rice, Spam, carrots and daikon. Mix gently and add remaining sesame oil and season to taste with salt according to your taste. Rip seaweed into tiny pieces and mix into rice mixture. Finish with sesame seeds. Form into mini 1″ -2″ round balls. Arrange on platter and finish with fine roasted salt for added flavor (optional).
